Q What are the ingredients in khao piak noodles?
They are either from Thailand or Laos.
A It’s the noodles eat in Vietnam, Loas and Issan (North-east) of Thailand. It might be originated from Vietnam as it’s very similar to vietnamese PHO. Inthe picture after the link!!
I give you a recipe:
AROMATIC RICE-NOODLE AND BEEF SOUP:
In its traditional form, this classic Lao soup is made with noodles rolled out and cut to order for each bowl. It is still excellent made with dried rice noodles. You can substitute fish, chicken, or pork for the beef, but rice noodles are an essential ingredient. The Lao like a considerable amount of lime juice in their food—here a range is given so that you can flavor the soup to your taste.
Active time: 1 hr. Start to finish: 1 1/4 hr.
1 lemongrass stalk
1 tablespoon Asian sesame oil
1 tablespoon vegetable oil
2 tablespoons minced shallot
2 small (1-inch) fresh Asian chiles such as bird or Thai, thinly sliced
2 tablespoons minced peeled galangal or fresh ginger
5 cups low-sodium chicken broth
1 tablespoon Asian fish sauce
2 whole star anise
1 (3-inch) cinnamon stick
1 teaspoon salt
1/4 teaspoon freshly crushed white peppercorns
2 small tomatoes, each cut into 8 wedges
6 small scallions, thinly sliced
2 to 4 tablespoons fresh lime juice 1/2 lb. dried flat rice noodles
1 (1-lb.) sirloin steak (about 1 inch thick)
3 (5 oz.) cups coarsely chopped spinach
1/4 cup coarsely chopped fresh mint
Discard any dry outer leaves from lemongrass and coarsely chop bottom third of stalk. Heat oils in a 5-qt. heavy pot over moderate heat until hot but not smoking, then cook shallot and chiles, stirring, until dark brown (be careful not to burn), 3 to 4 minutes. Add lemongrass and galangal and cook, stirring, 1 minute.
Add broth, fish sauce, star anise, cinnamon stick, salt, and white pepper and bring to a boil. Reduce heat and simmer 20 minutes. Pour through a fine sieve into another pot and discard solids. Add tomatoes, scallions, and lime juice and simmer until tomatoes are softened, about 10 minutes.
Bring a large pot of water to a boil for noodles. Trim fat from steak and season with salt and pepper. Heat a well-seasoned ridged grill pan over moderately high heat until hot, then grill steak 4 to 5 minutes on each side for rare. Let stand 5 minutes before slicing very thin.
Meanwhile, cook noodles in boiling water until tender, about 6 minutes, and drain. Divide among 4 large soup bowls and top with spinach and steak. Ladle soup over and sprinkle with mint.
Serves 4 as a main course.

I am just wondering why they are all upset? I am not familiar with the Thai politics.
A Its not the people its only part of the people. There are pro Government people massing in Rot et (Issan) and Nakhorn Pathom (outside bangkok). There may be a backlash coming.
Its is as if the Republican in the US lost the election and because they didn’t agree with what the Democrats were doing decided to protest the Government.
What these people want is to disenfranchise the poor who are about 70% of the country. They wanted to change the rules to elect only 30% of the legislators while they appoint 70%. The elected Government has its problems, but these yellow shirt people are puppets of Thugs and neer-do-wells. They don’t understand how democracy works. Its a shame how the world is portraying this on TV because those old ladies and children they show are being used to tear down a democracy. They did it once before and were out maneuvered and now they do it again.
My opinion is the only way to resolve this long term is to move the Government out of Bangkok and get away from the Chinese, the Rich, the Monarchy and the intelligentsia. They get the benefit of having a wonderful Government and a great country but are angry about paying taxes. (I am not anti King or Monarchy I just think the Constitutional Government of Thailand needs to be separated from the other factions that have influence and the Monarchy is one of those factions).
The rich in Bangkok monopolize the poor buy controlling the price of rice and keeping them uneducated. These poor people have to send there children to places like Pattaya to earn enough money to feed their families while the Chinese mafia and the corrupt police control the massage parlors and karaoke bars and give the girls barely enough to live on. They don’t think or worry about people eating rats and bugs or starving in the north. They think its funny that the people in the north are poor rubes, dirt farmers until there’s an election and the rubes show where the power is. Now they want that to end.
Also everyone tries to point out that the poor are getting paid for their votes but that is only a red herring as both sides engage in corrupt activities. Most of the people in the North vote their conscience. The Yellow Shirts (PAD) just use this to make their claim seem legitimate.
Yeah what is everyone going to say now that the Yellow PAD has the interest of the poor, give me a break. There already promising to stop paying taxes as a form of protest (Haha). (When you know that’s what they wanted to do from the start). The Yellow PAD never cared about the poor. Thakin at least tried to give them health care and improve the schools (before there were no schools to give failing grades to now at least there is a chance for an education).
And again I say that the Yellow PAD is as corrupt as the Red PPP but I guess you consider giving health care to people suffering from liver cancer because they have to spray chemical on the rice so you can eat corruption.
