Possibly there has been a name change, for this is the business I came across — click the icon to go to the restaurant website:

The restaurant is located in Alphington, a suburb of Melbourne, in Victoria, Australia. As for the name of the restaurant, it may be Paladarr Fine Thai and Cooking School, but it does appear to have been called Paladarr Thai Isaan in the past — note this excerpt from a January 2009 review in Citysearch.com.au:

Understanding the name explains much about this excellent eating place that’s grown in stature in the three years since it opened. Paladarr means a circle of friends, and Issan is a region in Thailand. So, in a building that looks as if it was once a double-storey suburban mansion, expect comfort, friendliness and unusually good Thai cooking. From the moment of approach, this is clearly no ordinary suburban restaurant. While the dining room is decorated in glamorous, warm browns and pinks, it’s not overtly formal. The solid timber tables are without cloths and are decorated with delicate lotus-flower candle-holders. The mood is welcoming, but professional.

As well, Urbanspoon‘s page for Paladarr Thai Issan includes a website that takes the visitor to Paladarr Fine Thai and Cooking School. This seems to be commonplace — I came across other review sites doing the same.

At any rate, one of the two owners is Chaloem Chaiseeha (the other owner is a Farang). AGFG (Australian Good Food & Travel Guide) has this fine biography of Master Chef Chaloem:

Chaloem Chaiseeha

Born: Loei City, Issan, Thailand

History: Chaloem was born in a small Village near Loei, a city in the mystical Issan Region of far north-eastern Thailand along side the mighty Mekong River and the Laos border. His cooking skills are innate. Watching and helping his mother and sisters lovingly prepare dishes for family and friends in the village planted the seeds for his culinary future. He and his family farmed sticky rice, hand fed poultry and fish, fresh aromatic vegetables, herbs and fruits, while buying and bartering special ingredients from the local markets. As many young Thai men do, he became a Buddhist Monk for seven years, and fed himself and his fellow monks, developing invaluable skills along the way.

When he arrived in Australia, he enrolled in many culinary courses at the Victoria University in Sunbury and promptly topped his class in each one with very little command of English. There he also obtained his Certificate IV in Workplace Training. He opened his first Restaurant, Thai Issan, in Trentham, a sleepy town in Victoria’s Macedon Ranges. His fame spread rapidly as he produced outstanding Thai cuisine for thousands of his loyal guests who travelled from near and far to savour his delights.

While living in the Macedon Ranges, he was invited to conduct cooking classes at the renowned William Angliss College of TAFE in Melbourne . He now runs the multi-award winning Paladarr Thai Issan Restaurant in Alphington, Victoria and employs the help of 4 chefs in his busy kitchen. He conducts sought after weekly cooking classes in his famous kitchen and leads cooking tours through his beloved Thailand and Laos.

Further to our item (Epicure 8/3/05) regarding the demise of Anthony Fullerton’s Paladarr restaurant and photography services provided to the restaurateur by Dean Cambray: Cambray was paid $8000 – including substantial out-of-pocket processing, printing and GST costs – for his services, not $10,000 as reported. The intention of the reference to Cambray’s photography was to highlight the fact the restaurateur had invested considerably in decoration before opening, and that it was a thematic link to the paddock-to-plate menu concept. There was no intended suggestion that Cambray’s invoice contributed to the failure of the business. Paladarr closed several weeks ago with chef-proprietor Anthony Fullerton’s unsecured creditors owed $427,488.82, according to documents from the controlling trustee of Fullerton’s estate, John D. Adams, of Horwath. Creditors must now decide whether to accept a personal insolvency agreement proposal or the debtors’ bankruptcy.

Name game

And further to our item last week about Paladarr Thai Issan restaurant and the business it was previously connected with, Issan Trentham: Issan Trentham was about to change its name to Asian Harmony (the proprietors have a restaurant of the same name in North Carlton) at the time the item was published. This decision has subsequently been reversed. Some of the personnel previously associated with Issan Trentham remain at the restaurant, although previous chef Chaloem Chaiseeha is now at Paladarr Thai Issan, which opens on April 9. Confusing, no?
